Ingredients

  • 1200 g Cod
  • 1 tbsp mayonnaise
  • 4 tbsp Old Bay
  • 2 zucchini
  • 3 cups fresh shiitake mushrooms
  • 3 tbsp olive oil
  • Several cloves of garlic
  • Salt and pepper to taste

Instructions

  • Make rice. Preheat oven to 200C/400F, and line a baking sheet with foil and parchment paper.
  • Wash and cut vegetables. Mince garlic finely.
  • Lay pieces of cod out onto a baking sheet. Spread a thin layer of mayo over the fish, and sprinkle the tops liberally with Old Bay.
  • Roast fish in the top rack for 12-15 minutes at 200C/400F.

  • Taste and adjust seasoning for vegetables. Switch off the heat, toss in minced garlic and stir it in.
  • Assemble and serve.
