Beef and Broccoli Stir Fry

Ingredients

  • 2 large heads broccoli
  • 2 lb beef sliced thin and marinated

Aromatics

  • Few slices of ginger
  • Few cloves of garlic

Marinade

  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1 pinch baking powder

Sauce

  • Remainder of marinade
  • 1 tsp corn starch
  • 1 tbsp water

Instructions

  • Cut and marinade the beef.
  • Make rice. Bring pot of water to boil, and salt liberally.
  • Wash and cut vegetables. Prepare aromatics.
  • Blanche broccoli in vigorously boiling water for two or three minutes, or until they’re a hair undercooked.
  • Remove broccoli from water. Optionally, shock in ice water. Allow to drain.
  • Put a pan on high heat. Stir fry aromatics in a bit of oil until fragrant.
  • Add beef and stir fry until slightly pink.
  • Add drained broccoli and marinade. Stir to combine, then serve.
