Bolog Bowl – Meal Prep Bolognese Rice Bowls

Ragu Bolognese and rice are both easy to make huge batches of, and both freezer friendly. Together, they make fr a great meal prep. Serve with a poached egg for visual and textural contrast.

Ingredients

  • 500 g ground beef
  • 500 g ground pork
  • 1 large carrot
  • 2 yellow onions
  • 1000 g canned tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp dried mixed herbs
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar

Instructions

  • Chop up onions and carrots, or use a food processor.
  • Sweat the vegetables in a pan with a pinch of salt.
  • Once translucent, make a well in the vegetables and sauté some tomato paste in there. Mix to combine, then add the ground meat.
  • Stir and break up the meat. Add canned tomatoes. Season to taste. Bring to a simmer.
  • Meanwhile, cook rice, make the eggs, and do some cleanup.
  • Once the rice is done, take the sauce off the heat and stir in a splash of balsamic vinegar.
  • Combine and serve.
