Chicken Teriyaki Rice Bowl Meal Prep

- 1000 g boneless skin-on chicken thighs
- 1000 g vegetables of choice
- Sesame seeds and scallion greens for garnish
Teriyaki sauce
- 6 tbsp soy sauce
- 6 tbsp mirin
- 2 tbsp sugar
Marinate chicken thighs with salt the day before.
Get rice cooking. Wash and chop vegetables.
Stir-fry vegetables, then reserve.
Sear chicken thighs until brown and crispy. Reserve.
Simmer teriyaki sauce ingredients until reduced.
Toss chicken in sauce. Sear the skin side with a kitchen torch or the broiler until very slightly charred
Garnish and serve.
