Chicken Tocino - Filipino style Grill

Tangy, spicy and savoury - chicken doesn’t get better than this! Here’s a recipe for grilled chicken with a sweet and sticky pineapple juice glaze.

Ingredients

  • 1000 g boneless chicken thighs
  • 200 ml pineapple juice
  • 3 tbsp ketchup
  • 1 tbsp garlic paste
  • 1 tbsp soy sauce
  • Salt and pepper to taste

Instructions

  • The night before, cut chicken thighs into small pieces and mix well with marinade ingredients. Keep in the fridge until ready to grill.
  • Get the charcoal grill going. While waiting for the coals to burn down, skewer the chicken
  • Grill chicken skewers until the meat is cooked through and lightly charred.
  • Assemble and serve.
