Edamame, Pork and Pickled Snow Cabbage Stir Fry

Edamame are rich in fiber and protein, and they become a great rice bowl topping when stir fried with some ground pork. Prepare some extra edamame and keep them on hand as a healthy, meal-prep friendly snack.

Ingredients

  • 1000 g shelled edamame beans
  • 600 g ground pork
  • 100 g Pickled snow cabbage
  • 3 tbsp soy sauce
  • 1 tsp salt or to taste
  • 1 tsp sugar
  • 2 cloves garlic minced
  • Chili flakes if desired

Instructions

  • Blanche edamame in salted water for 3-5 minutes. Allow to drain and cool off.
  • Start making rice in a rice cooker.
  • Shell the edamame.
  • Brown ground pork in a pan. Add pickled snow cabbage, garlic, soy sauce and sugar to taste.
  • Stir fry for a bit, then add all the edamame. Stir to combine.
  • Assemble rice bowls and serve.
