Edamame, Pork and Pickled Snow Cabbage Stir Fry
Edamame are rich in fiber and protein, and they become a great rice bowl topping when stir fried with some ground pork. Prepare some extra edamame and keep them on hand as a healthy, meal-prep friendly snack.

- 1000 g shelled edamame beans
- 600 g ground pork
- 100 g Pickled snow cabbage
- 3 tbsp soy sauce
- 1 tsp salt or to taste
- 1 tsp sugar
- 2 cloves garlic minced
- Chili flakes if desired
Blanche edamame in salted water for 3-5 minutes. Allow to drain and cool off.
Start making rice in a rice cooker.
Shell the edamame.
Brown ground pork in a pan. Add pickled snow cabbage, garlic, soy sauce and sugar to taste.
Stir fry for a bit, then add all the edamame. Stir to combine.
Assemble rice bowls and serve.
