Glass Noodles and Garlic Butter Shrimp
Steam some glass noodles with fresh shrimp, garlic and butter to imbue them with a wonderful, savoury flavour. A delightful dinner for any weekend, or for a special occasion.

- 600 g shrimp
- 60 g glass noodles
- 0.5 heads of garlic minced
- 30 g butter
- 2 tbsp soy sauce
- 1 tsp sugar
- Green onions and chili pepper for garnish
Rehydrate glass noodles by soaking in hot water for 15 minutes, or cold water for an hour. Cut into manageable lengths.
Sweat half of the garlic in the butter. Switch off the heat, add glass noodles and seasonings, then stir to combine.
Transfer seasoned noodles to a dish. Reserve most of the remaining sweated garlic and mix it into the raw garlic.
Give the shrimp a rinse. Cut the legs and the whiskers off, and cut deeply into the back without cutting through. Devein.
Stuff each shrimp with some of the minced garlic mixture. Arrange on top of the glass noodles in the dish.
Bring water to a vigorous boil. Cover and steam the shrimp on high heat for 5-6 minutes.
Serve with rice, immediately once the shrimp is done.
