Ingredients

  • 1 kg boneless skin on chicken thighs
  • 1 tbsp gochujang
  • 2 tbsp honey
  • 2 tsp soy sauce
  • 2 tsp rice wine vinegar
  • Salt and pepper to taste

Instructions

  • On the day before cooking, marinade the chicken thighs.
  • Preheat the oven to 200C/400F.
  • Line a baking sheet with foil and parchment paper.
  • Place chicken in one layer, skin side up. Roast for 30 minutes.
  • While the chicken roasts, make rice and cook vegetables.
  • Assemble and serve.
