- 1 kg boneless skin on chicken thighs
- 1 tbsp gochujang
- 2 tbsp honey
- 2 tsp soy sauce
- 2 tsp rice wine vinegar
- Salt and pepper to taste
On the day before cooking, marinade the chicken thighs.
Preheat the oven to 200C/400F.
Line a baking sheet with foil and parchment paper.
Place chicken in one layer, skin side up. Roast for 30 minutes.
While the chicken roasts, make rice and cook vegetables.
Assemble and serve.
