Servings: 8
- 800 g glass noodles rehydrated in water for several hours
- 1 head of garlic finely minced
- 1000 g grouper or any firm-fleshed fish
- 4 tbsp cooking oil
- 1600 g vegetables of choice
Sauce
- 6 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp sugar
- Water to taste
Soak glass noodles in boiling water while the rest of the ingredients are prepped.
Mince the garlic and cut the fish into manageable chunks. The glass noodles should be softened by now and ready to be snipped a few times with scissors.
Cook fish until barely done, then reserve.
In the same pan, briefly sautee the garlic before returning the fish together with the vermicelli and sauce. Stir and cover on low heat to let it steam and let the flavours mingle.
In the meantime, prepare vegetables. Cook in the same pan to make use of the residual flavour, or in another pan for greater speed.
Once everything is done, serve hot.
