Lentil and Beef Chili
Lentils are high in protein and fiber. Use them to stretch out the meat in a chili, while improving the nutritional value.

- 1 lb ground beef
- 1 lb dried lentils rinsed well
- 2 lbs crushed tomatoes
- 3 bell peppers
- Several garlic cloves
- 1 onion
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 tsp coriander
- 1 tsp dried chilli flakes
- 1 tsp dried oregano
- 1 tsp cocoa powder
Char peppers with kitchen torch. Cover and let them steam for 15 minutes before scraping off the charred skin.
Dice peppers and onions, and mince garlic
Sautee peppers, onions and garlics in oil until fragrant. Add spices and cocoa powder.
Add ground beef into pan and allow to brown. Rinse lentils and add to pan, along with tomatoes and water/stock.
Bring contents of pan to a simmer. Cook rice.
Check the lentils for doneness after about 30 minutes of simmering. Adjust for seasoning and serve.
