Lentil and Beef Chili

Lentils are high in protein and fiber. Use them to stretch out the meat in a chili, while improving the nutritional value.

Ingredients

  • 1 lb ground beef
  • 1 lb dried lentils rinsed well
  • 2 lbs crushed tomatoes
  • 3 bell peppers
  • Several garlic cloves
  • 1 onion
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tsp coriander
  • 1 tsp dried chilli flakes
  • 1 tsp dried oregano
  • 1 tsp cocoa powder

Instructions

  • Char peppers with kitchen torch. Cover and let them steam for 15 minutes before scraping off the charred skin.
  • Dice peppers and onions, and mince garlic
  • Sautee peppers, onions and garlics in oil until fragrant. Add spices and cocoa powder.
  • Add ground beef into pan and allow to brown. Rinse lentils and add to pan, along with tomatoes and water/stock.
  • Bring contents of pan to a simmer. Cook rice.
  • Check the lentils for doneness after about 30 minutes of simmering. Adjust for seasoning and serve.
