Meal Prep Chicken Thighs with Yogurt and Mint Marinade
Take advantage of yogurt’s thick texture, tenderising properties and ability to promote browning to make some tasty chicken thighs.

- 1000 g boneless skin-on chicken thighs
- 2 tbsp plain unsweetened yogurt
- 1 tsp garlic finely minced or grated
- 1 tsp dried mint
- Salt and pepper to taste
- 1000 g vegetables of choice
Marinade chicken the night before cooking.
Preheat oven. Make rice.
Lay chicken out on sheet pains lined with foil and baking paper.
Bake at 180C/360F for about 20 minutes, flipping halfway.
Wash and cook vegetables in the meantime.
Assemble and serve.
