Miso Glazed Salmon Rice Bowls
Miso is a fermented soybean product that is commonly used in Japanese cooking. Its delicate umami enhances the flavour of salmon without overwhelming it, and a honey miso glaze is great to keep things fresh and interesting to the palate!

- 600 g salmon cut into cubes
- 600 g string beans or vegetables of choice
- Several cloves of garlic minced
Glaze
- 2 tbsp miso
- 2 tbsp soy sauce
- 2 tbsp honey
Get rice cooking. In the meantime, mix up the glaze in a big mixing bowl.
Toss salmon in the glaze, and spread it onto baking sheets lined with foil and parchment paper.
Roast salmon in the oven at 180c/350f for 10-20 minutes, depending on size and preferred doneness.
While salmon is roasting, wash and cut the vegetables. Stir fry with garlic and season to taste.
Assemble and serve.
