Miso Honey Chicken Thighs

- 1000 g skin on boneless chicken thighs
- 1200 g vegetables of choice seasoning to taste
Marinade
- 1 tbsp miso
- 1 tbsp light soy sauce
- 2 tbsp honey
- 1 tsp vinegar
Whisk together the miso, soy sauce, honey and vinegar. Taste and adjust, then massage the marinade into the chicken.
Start the rice and preheat the oven to 180c/350f. Line baking sheet with foil and parchment paper.
Lay chicken in one layer on the baking sheet, skin side up. Roast at 180c/350f for about 30 minutes.
In the meantime, wash and cook vegetable as desired.
Start cleaning up and dividing food into containers while waiting for the chicken to be done.
Assemble and serve.
