Oven-fried Karaage – Meal Prep Friendly Japanese Fried Chicken

Fried chicken is much easier in the oven. These Karaage-inspired wings are minimal effort, minimal cleanup and meal-prep friendly.

Ingredients

  • 1 kg chicken drumettes or mid joint wings

Marinade

  • 2 tsp salt
  • 1 tbsp soy sauce
  • 1 tsp sake
  • 1 tsp mirin
  • 1 tsp sesame oil
  • White pepper to taste
  • 1 tsp grated ginger
  • 1 tsp grated garlic

Starch coating

  • 5 tbsp corn starch or potato starch
  • 1 tsp baking powder

Instructions

  • The day before, marinade the chicken.
  • Preheat oven to 225C/425F. Line a baking sheet with foil and baking paper.
  • Toss chicken in corn starch and baking powder mixture, until lightly coated.
  • Spread chicken out on the baking sheet and bake, turning every 20mins or so for 40-60mins until lightly browned.
  • While waiting for chicken to bake, cook rice and vegetables.
  • Assemble and serve.
