Oven-fried Karaage – Meal Prep Friendly Japanese Fried Chicken
Fried chicken is much easier in the oven. These Karaage-inspired wings are minimal effort, minimal cleanup and meal-prep friendly.

- 1 kg chicken drumettes or mid joint wings
Marinade
- 2 tsp salt
- 1 tbsp soy sauce
- 1 tsp sake
- 1 tsp mirin
- 1 tsp sesame oil
- White pepper to taste
- 1 tsp grated ginger
- 1 tsp grated garlic
Starch coating
- 5 tbsp corn starch or potato starch
- 1 tsp baking powder
The day before, marinade the chicken.
Preheat oven to 225C/425F. Line a baking sheet with foil and baking paper.
Toss chicken in corn starch and baking powder mixture, until lightly coated.
Spread chicken out on the baking sheet and bake, turning every 20mins or so for 40-60mins until lightly browned.
While waiting for chicken to bake, cook rice and vegetables.
Assemble and serve.
