Ingredients

  • 8 eggs beaten
  • 3 tomatoes cut into wedges

Aromatics

  • 1 slice ginger
  • Several sections of scallion

Sauce

  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 tbsp ketchup

Instructions

  • Get rice cooking.
  • Prepare aromatics and sauce ingredients. Wash and cut tomatoes. Beat the eggs.
  • On medium heat, scramble eggs until almost completely set, then reserve.
  • Stay on medium heat. Stir fry aromatics in oil until fragrant, then add tomatoes.
  • Add sauce ingredients, then simmer for a few minutes.
  • Return eggs to pan, toss to combine, and serve.
