- 8 eggs beaten
- 3 tomatoes cut into wedges
Aromatics
- 1 slice ginger
- Several sections of scallion
Sauce
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tbsp ketchup
Get rice cooking.
Prepare aromatics and sauce ingredients. Wash and cut tomatoes. Beat the eggs.
On medium heat, scramble eggs until almost completely set, then reserve.
Stay on medium heat. Stir fry aromatics in oil until fragrant, then add tomatoes.
Add sauce ingredients, then simmer for a few minutes.
Return eggs to pan, toss to combine, and serve.
