Quick Weeknight Kimchi Pancakes

Also known as kimchi-jeon or kimchi-buchimgae. The kimchi does the heavy lifting so you don’t have to. A quick, easy and delicious weeknight dinner.

Ingredients

  • 100 g low gluten flour
  • 100 g cabbage kimchi
  • 1 large egg
  • 0.5 tsp sugar
  • 0.5 tsp gochujang

Other fillings

  • Scallions
  • Imitation crab
  • American cheese

Dipping sauce

  • 2 tbsp light soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • Sesame seeds for garnish

Instructions

  • Gather ingredients. Chop up the fillings.
  • Mix flour, water and salt together until a thick pancake batter is formed.
  • Add kimchi and fillings, then stir to combine.
  • Get a generous amount of oil into a nonstick pan on medium heat.
  • Pour in the batter and fry for several minutes on both sides, until golden.
  • Mix sauce ingredients together and adjust for seasoning.
  • Assemble and serve.
