Quick Weeknight Kimchi Pancakes
Also known as kimchi-jeon or kimchi-buchimgae. The kimchi does the heavy lifting so you don’t have to. A quick, easy and delicious weeknight dinner.

- 100 g low gluten flour
- 100 g cabbage kimchi
- 1 large egg
- 0.5 tsp sugar
- 0.5 tsp gochujang
Other fillings
- Scallions
- Imitation crab
- American cheese
Dipping sauce
- 2 tbsp light soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- Sesame seeds for garnish
Gather ingredients. Chop up the fillings.
Mix flour, water and salt together until a thick pancake batter is formed.
Add kimchi and fillings, then stir to combine.
Get a generous amount of oil into a nonstick pan on medium heat.
Pour in the batter and fry for several minutes on both sides, until golden.
Mix sauce ingredients together and adjust for seasoning.
Assemble and serve.
