Shrimp and Egg Stir Fry with Special Soy Sauce

For the stir fry:
- 1 kg shrimp after being peeled and deveined
- 10 large eggs
- 2 tsps salt
- 2 tsps white pepper
- MSG or chicken bouillon powder to taste
For the sauce:
- 3 tbsp light soy
- 1 tbsp dark soy
- 1 tbsp oyster sauce
- 2 tbsp Shaoxing wine
- 2 tbsp water
- 1 tbsp sugar
- 1 tsp vegetable oil
- Shallots and scallion greens to taste
Prepare aromatics and gather ingredients.
Fry aromatics in oil on low heat until fragrant. Add the other special soy sauce ingredients, and simmer briefly until the sugar is dissolved.
Fish out aromatics, and reserve the sauce.
In the meantime, beat and season the eggs.
After the sauce is done, stir fry shrimp briefly on medium heat.
When shrimp are almost done, add eggs and stir until barely set.
Assemble and serve.
