Ingredients

For the stir fry:

  • 1 kg shrimp after being peeled and deveined
  • 10 large eggs
  • 2 tsps salt
  • 2 tsps white pepper
  • MSG or chicken bouillon powder to taste

For the sauce:

  • 3 tbsp light soy
  • 1 tbsp dark soy
  • 1 tbsp oyster sauce
  • 2 tbsp Shaoxing wine
  • 2 tbsp water
  • 1 tbsp sugar
  • 1 tsp vegetable oil
  • Shallots and scallion greens to taste

Instructions

  • Prepare aromatics and gather ingredients.
  • Fry aromatics in oil on low heat until fragrant. Add the other special soy sauce ingredients, and simmer briefly until the sugar is dissolved.
  • Fish out aromatics, and reserve the sauce.
  • In the meantime, beat and season the eggs.
  • After the sauce is done, stir fry shrimp briefly on medium heat.
  • When shrimp are almost done, add eggs and stir until barely set.
  • Assemble and serve.
