Ingredients

  • 1000 g boneless skin-on chicken thighs
  • Sesame oil to taste
  • Cilantro for garnish
  • Aromatics
  • 1 tsp Szechuan peppercorn powder
  • 1 tsp cumin
  • 1 tsp five spice powder
  • 1 tsp dried chilis
  • Several cloves of garlic
  • Several shallots
  • Several pieces of ginger
  • 2 tbsp doubanjang
  • 2 tbsp tianmianjang
  • Sauce
  • 3 tbsp light soy sauce
  • 3 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Chinese rice wine

Instructions

  • Get rice cooking. Prepare aromatics and sauce components.
  • Fry chicken, working in in batches.
  • Fry aromatics in remaining oil.
  • Return chicken to wok, add sauce components.
  • Braise on gentle heat until flavours combine.
  • Serve with cilantro and sesame oil for garnish.
