Teriyaki Sous Vide Chicken Breast Rice Bowls

Ingredients

  • 1 kg Boneless skinless chicken breasts

Teriyaki sauce

  • 6 tsp soy sauce
  • 6 tsp mirin
  • 6 tsp Chinese rice wine or sake
  • 6 tsp sugar

Vegetables

  • 1400 g lettuce
  • 100 g enoki mushrooms

Instructions

  • Sous vide chicken breasts from frozen, for 2 hours at 60C/140F
  • Make rice. Wash vegetables well, and cut into bite sized pieces.
  • Cook vegetables in a heat-resistant pan. Reserve, and wipe the pan clean.
  • Simmer teriyaki sauce ingredients together until thickened to your liking.
  • Toss chicken breasts in teriyaki sauce, and torch them with a kitchen torch.
  • Assemble and serve.
