Teriyaki Sous Vide Chicken Breast Rice Bowls

- 1 kg Boneless skinless chicken breasts
Teriyaki sauce
- 6 tsp soy sauce
- 6 tsp mirin
- 6 tsp Chinese rice wine or sake
- 6 tsp sugar
Vegetables
- 1400 g lettuce
- 100 g enoki mushrooms
Sous vide chicken breasts from frozen, for 2 hours at 60C/140F
Make rice. Wash vegetables well, and cut into bite sized pieces.
Cook vegetables in a heat-resistant pan. Reserve, and wipe the pan clean.
Simmer teriyaki sauce ingredients together until thickened to your liking.
Toss chicken breasts in teriyaki sauce, and torch them with a kitchen torch.
Assemble and serve.
