Yakitori-inspired Chicken And Rice Meal Prep

Inspired by the taste of Japanese grilled chicken skewers, recreated at home.

Ingredients

  • 1 kg skin on boneless chicken thighs

Marinade and glaze

  • 6 tbsp light soy sauce
  • 3 tbsp mirin
  • 5 tsp sugar
  • Black pepper to taste

Vegetable stir fry

  • 1200 g string beans and carros
  • 2 tbsp light soy sauce
  • 1 tsp fish sauce
  • 1 tsp sugar

Instructions

  • Mix the chicken with marinade ingredients and refrigerate overnight.
  • The next day, preheat oven to 200C/400F and start the rice cooker.
  • Lay chicken onto a baking sheet with aluminium foil and parchment paper. Roast in oven for 30 minutes.
  • While chicken roasts, wash and cut the vegetables, and prepare the stir fry sauce.
  • Cook vegetables in a skillet or wok, on medium-high heat. Once done to your liking, stir in the sauce until combined.
  • Assemble and serve.
