Yakitori-inspired Chicken And Rice Meal Prep
Inspired by the taste of Japanese grilled chicken skewers, recreated at home.

- 1 kg skin on boneless chicken thighs
Marinade and glaze
- 6 tbsp light soy sauce
- 3 tbsp mirin
- 5 tsp sugar
- Black pepper to taste
Vegetable stir fry
- 1200 g string beans and carros
- 2 tbsp light soy sauce
- 1 tsp fish sauce
- 1 tsp sugar
Mix the chicken with marinade ingredients and refrigerate overnight.
The next day, preheat oven to 200C/400F and start the rice cooker.
Lay chicken onto a baking sheet with aluminium foil and parchment paper. Roast in oven for 30 minutes.
While chicken roasts, wash and cut the vegetables, and prepare the stir fry sauce.
Cook vegetables in a skillet or wok, on medium-high heat. Once done to your liking, stir in the sauce until combined.
Assemble and serve.
